The first recipe, a cheesy chicken noodle casserole, is a meal in itself. The second is a chicken divan that is very rich and creamy; serve it with toasted bread to soak up that rich sauce. The last chicken and broccoli recipe is so cheesy it’s almost decadent.

Ingredients:

– half of a 12 oz package of egg noodles

– 2 cups of chicken, cooked and cut into bite-size pieces

– one 10 oz package of frozen broccoli

– one 10.5 oz can of cream of mushroom soup

– 1/2 cup milk

– 1/2 cup or more shredded Swiss cheese

– handful of chopped green onions

– 1 teaspoon dried basil

– salt and pepper to taste

Directions: Preheat oven to 350 degrees Fahrenheit. Bring a pot of water to a boil and cook egg noodles according to package directions. Drain the noodles and add them back into the pot. Add the chicken, broccoli, cream of mushroom soup, milk, 1/2 cup of Swiss cheese, green onions, basil, salt, and pepper. Stir to combine. Pour all of this into a greased casserole dish and top with extra cheese if desired. Bake in the oven for 45 minutes.

Ingredients:

– 3 cups of chicken, cooked and shredded

– one 10 oz package of chopped frozen broccoli, thawed

– one 10.5 oz can of cream of mushroom soup

– 1/2 cup mayonnaise

– 1/2 cup sour cream

– 1 tablespoon Dijon mustard

– 1/2 cup shredded cheddar or Swiss cheese

– ground black pepper

– 1/4 cup breadcrumbs

– 1/4 cup shredded or grated Parmesan cheese

– cooking spray or melted butter

Directions: Preheat oven to 350 degrees Fahrenheit. In a bowl, mix together the canned soup, mayonnaise, sour cream, Dijon mustard, cheddar or Swiss cheese, and black pepper. Add the cooked chicken and thawed broccoli, and stir to combine. Put all of this into a greased casserole dish. Top with Parmesan cheese and breadcrumbs. Spray the top evenly with cooking spray or drizzle melted butter over the top. Pop the dish into the oven and bake for about half an hour.
